The cuisine features a reworking of the typical Neapolitan dishes based on local products, available on the island as tomatoes (those of the "piennolo"), garlic, basil, pepper, oregano, parsley, and as vegetables: eggplant, artichokes, lettuce, peppers, potatoes and zucchini.
Ischia, has good seafood as anchovies, octopus, squid, rockfish, mussels, clams, lobster, eagles and many other varieties of fish caught off the island. Highlight in particular the so-called "Paranza", a variety of small fish caught in the Gulf and are great to cook fried.
The lemon is widely used and covers a major role in island cuisine. It's also used for the preparation of a typical liquor, "Limoncello".
